Winemaking
Winemaking
Six different clones of Shiraz grown on our property went into this wine.
Picked at four different times over the season to obtain the best ripeness for each clone and each block.
Machine picked and destemmed into 1 tonne bins where they were fermented for 15 days. Hand plunged 3 times a day, then basket-pressed when dry, directly to barrel.
Full malolactic fermentation was conducted in barrel and the wines were left to mature in a combination of 1, 2 and 3 yr old French oak barriques for 16 months.

* 95 pts - Tony Love - Winemaker/ vigneron and partner Wendi Ticao work two family vineyards in two regions, this from their highly prized Adelaide Hills property, elegant in all its revealing moments, cool styling, fleshy cherry and satsuma plum flavour feels, crimson, bright and tangy in its mouth appeal, medium-weighted and fruit-pure without interference of oak except for a subtle peppery spice. Lively, modern Shiraz with heaps of energy – moreish beyond normal self-control bounds.
* 95 pts - Intl. Cool Climate Wine Show - Blue and black fruits, black forest cake with some sweet fruit characters. Bitter finish- chewy tannins. Lovely brightness. Herbal, bunchy and excellent. Really classy and complete. Texture sensational, very plush.
